Vagharelo rotlo is famous kathyawadi dish and very popular in gujarat. Its is a smoky flavour of garlic. In a winter season, people enjoy bajra rotlo with different types of dishes like baingan ka bharta. 

Millet flour is very healthy and gives much more nutritious. Especially in Kathiyawad region, in winter people enjoy bajra rotlo with baingan ka bharta along with buttermilk, jaggery and green chillies. It is a complete meal for kathayawad people.

Ingredients :

  • Bajra Roti (Millet Flatbread) - 2
  • 2 tbsp oil
  • 1 tbsp cumin seeds
  • 1 tbsp mustard seeds
  • 1/2 tbsp asfoetida (hing)
  • buttermilk / curd - 1 cup
  • 1 tbsp ginger-garlic paste
  • 1 spring curry leaves
  • 1 tbsp red chili powder
  • salt to taste
  • 1/2 tbsp turmeric powder
  • 1/2 garam masala powder
  • half cup chopped onion (optional)
  • half cup chopped tamato (optional)

Instructions :

  • In a plate break bajra rotlo into small pieces with hand.
  • Now in a pan, add oil when the oil becomes hot add mustard seeds, asfoetida, cumin seeds, curry leaves and turmeric powder also add chopped onion and tomato to it and saute for 2-4 minutes.
  • Now add ginger-garlic paste to it and mix well and add buttermilk or curd and mix well again.
  • Finally add crushed bajra roti and then add salt, garam masala powder, green chili and let it mix for 8-10 minutes.
  • Now its ready and garnish it with fresh coriander leaves and serve hot in bowl or plate of your choice.
