Ingredients :
- 250 g chickpea flour (besan)
- 1/2 tbsp turmeric
- salt to taste
- 3 tbsp sugar
- 350 ml water
- 2 tbsp baking soda or eno
- 3 tbsp freshly-chopped coriander
- Tempering : Oil, mustard seeds, curry leaves and green chilies. If you don't have all the ingredients for the tempering whatever is available from the list.
Instructions :
- In a large bowl add chickpea flour,breaking down any large lumps left in seive.
- Add turmeric, salt and sugar to combine.
- Slowly add water, a beat with a hand-held whisk or pair of any electronic beaters, about 7-10 minutes. The batter should be smooth.
- Once a batter is smooth add eno or baking soda to quickly ferment the batter untill it is well blended. Wisk the batter in one direction. The batter will become a double in size.
- Now grease the container you are using like, springfoam pan,baking tray or cups and pour the batter.
- Fill the pan with water and place a trivet at the base. Set this container over the trivet. Cover with a lid and steam khaman for about 15-20 minutes.
- Check if khaman is properly cooked. It should come out clean. Allow to cool for 10 minutes before removing from the mold or cutting pieces.
- Now instant khaman is ready for tempering.
Preparing the tempering :
- In a pan heat oil add mustard seeds, green chilies and let it crackle on a low flame. Add curry leaves and when they are crisp, add sugar and water and mix well.
- This hot mixture over the khaman.Enjoy the delicious Gujarati snack khaman with a chutney or tea of your choice.
